Noma is a restaurant in Copenhagen owned by Rene Redzepi. This restaurant has earned two Michelin stars and has been awarded as The Best Restaurant in the World for 3 years in a row. The food is probably the main reason for this restaurant’s acclaim but there are some things that they do that a small business owner can learn from.  Aside from good food, they have good practices that help them be on top of their game. The chefs in Noma are innovative. You can clearly see that in their menu – reindeer moss with mushroom powder, barbecue carrots with sorrel sauce and hay ash, crispy pork skin with black currant juice. They have bark, ants and moss on their ingredients list.  They use ingredients which are freshly gathered from a nearby woods.
