What Small Business Owners Can Learn from the Best Restaurant in the World

Noma is a restaurant in Copenhagen owned by Rene Redzepi. This restaurant has earned two Michelin stars and has been awarded as The Best Restaurant in the World for 3 years in a row. The food is probably the main reason for this restaurant’s acclaim but there are some things that they do that a small business owner can learn from.  Aside from good food, they have good practices that help them be on top of their game. Here are some of them.

Innovation

The chefs in Noma are innovative. You can clearly see that in their menu – reindeer moss with mushroom powder, barbecue carrots with sorrel sauce and hay ash, crispy pork skin with black currant juice. They have bark, ants and moss on their ingredients list.  They use ingredients which are freshly gathered from a nearby woods.

If you are an aspiring business owner, you should be innovative. You won’t be able to survive if you don’t have unique ideas. Try to utilize the resources around you just like what the chefs of Noma do. Find inspiration in everyday things.

Warm and inviting

The atmosphere in Noma is warm and inviting. If you have a brick and mortar store, make sure that customers won’t be intimidated to go inside. Tell your staff to be nice and friendly but not too overwhelming. Try and maintain a distance from your customers but be ready to assist them when they call.

Hierarchy is out

At Noma, the chefs also serve as waiters. This gives them an opportunity to interact with their customers. They can see if the customers enjoyed their food. Just because you’re the boss doesn’t mean that you can’t serve your customers. They are your lifeblood and customer service is your main duty. Try and man your store for a day or two to be able to connect to your customers. You might learn a thing or two from them.

Embrace diversity

Chefs at Noma come from all over the world. Now I’m not saying that you should employ people from all over the world. Diversity comes in many forms. If you open your eyes and open your mind to its different forms, you are bound to discover something good. Try different things in your business and you will surely be surprised with the results.

Surprise your clients

Every now and then, you should surprise your clients with new promos, discounts, new products, new offers, gifts, etc. This is a way of thanking your most valued clients and keeping a good working relationship with them. It’s also a good form of brand retention. It’s like giving your clients a reminder that you are still here.

Encourage creativity

Encourage your staff to speak up if they have a good idea. At Noma, they keep a list of recipes to try and tweak. They have regular meetings wherein they try out a dish and deliberate if it’s a good fit for the restaurant. They encourage everyone to speak if they have an idea to make the service better or to save more time. Everyone is given an equal opportunity to become a project leader. Who knows, you might find a gem among your staff.
